Guest Chef March 2012: Ryan Clift
In his ultra-hip Tippling Club in Singapore, Ryan Clift treats his guests to weird and wonderful menus in the molecular style. His creations are a real pleasure for any discerning gourmet.
At the age of 14, Clift was supplementing his pocket money as a dishwasher in a Michelin-starred London restaurant, but it wasn’t long before his passion for cooking took hold. After graduating from cookery school, he worked under famous chefs such as Peter Gordon, Emmanuel Renaut, Shannon Bennett and Raymond Capaldi. In 1999, Clift relocated to Australia, where he worked at the Melbourne-based Vue de Monde, one of the country’s finest French restaurants. During this period, Ryan Clift cooked his way into the gastronomic limelight, and countless awards were soon to follow. Since 2008, he has been serving the guests at his Tippling Club exquisite five-, tenand even 15-course menus, accompanied by equally unusual cocktails.
Each month at Salzburg’s two Michelin-starred Restaurant Ikarus, a different top international chef creates the menu.
