The hotel The Landmark Mandarin Oriental is based in Queen’s Road in the centre of Hong Kong. Richard Ekkebus works here as the chef of the exquisite French restaurant Amber as well as being responsible for all the kitchens at the luxury hotel in his role as Culinary Director.
Ekkebus was born in the Netherlands and learnt the art of haute cuisine during his time in France in particular. “I developed a deep appreciation of the French people and their pride for their fertile land and everything they plant and harvest in the fields”. This appreciation is reflected in his innovative dishes which use only the finest and freshest ingredients from all over the world, paired with ingredients from Hong Kong. The Michelin Guide has honoured his innovative interpretations of classic top quality French cuisine with 2 stars.
