Guest Chef September 2014: Matthew Lightner
An exquisite dish is just like a good book: It combines the experiences, emotions and world views of a chef to create a unique pleasure for the palate. Matthew Lightner is a true master of this art.
He owes this to his culinary journey of over ten years which has taken him to some of the best restaurants, from the West Coast of America to Europe. As a young chef, he avidly gathered experiences and flavours at Paul McCabe’s L’Auberge or Andoni Luis Aduriz´ Mugaritz, amongst others. Lightner now incorporates these into his own modern cuisine based at the heart of New York City where he opened his Atera in 2012. Here, his culinary pioneering spirit is paired with classic elements of European dining culture – this is reflected in Lightner’s passion for seasonal and regional products, his love of vegetables and, last but not least, the cosy atmosphere of his premises. The result: two Michelin stars and countless delighted guests.
Each month at Salzburg’s two Michelin-starred Restaurant Ikarus, a different top international chef creates the menu.
