In Hertog Jan in Zedelgem, Bruges, head chef Gert De Mangeleer certainly has no objection to guests in jeans – after all they represent the perfect symbol for the complexity of his creations.
De Mangeleer is, in fact, driven primarily by simplicity. Yet the master of stripping back to the bare essentials succeeds in giving his dishes incredible depth - by focusing on the development of flavour, texture and contrast. As a result, he expanded the Nova Regio cuisine concept using an intelligent touch: De Mangeleer uses strictly regional ingredients, however he hones them to create true masterpieces by using international premium products. The inherent intelligence of his dishes and the boldness in compiling his compositions has now won the Hertog Jan three Michelin stars.
