Virgilio Martínez has travelled the world, experienced a lot and has tried a lot more. It has been a long time since he has been back to his native Peru. However, it was worth it, because he found here what he had searched for across the globe: his determination to advance the cuisine of the Andes to even greater heights.
Peru’s wealth of special ingredients ranges for thousands of metres of altitude and Martínez decided to bring this wealth to the plate. Driven by an insatiable inquisitiveness and with a determined will to convey the complexity of the country, Martínez concentrates almost radically on his home country in his flagship restaurant, the Central Restaurante in the Miraflores district in Lima, ingeniously combines ingredients to create perfectlycoordinated and exceedingly aesthetic dishes. Martínez is hailed today as the most influential representative of a new generation of Peruvian cuisine.
