Markus' professional journey at Hangar-7 began at a young age with his first internship at Restaurant Ikarus. After successfully graduating from the "Höheren Bundeslehranstalt" for Tourism in Semmering, he returned to Hangar-7 in 2018 and has been an integral part of the Ikarus team ever since with his calm and charming personality.  In the following six years, Markus worked his way up from Commis de Rang to Deputy Restaurant Manager. Since the beginning of 2024, the Lower Austrian has been at the head of the Restaurant Ikarus service team as Restaurant Manager.

I love and live what I do and the guests are the most important thing for me at this moment.

What does the perfect dinner look like for you?
For me personally, the most important thing is the company. It doesn't matter whether you eat well in a pub or a gourmet restaurant. For me, it's important that you spend the evening with the right people, have fun and feel comfortable. And of course, a nice bottle of wine is a must.

What moments make a successful working day for you?
For me, a successful working day is when both the guests and the employees have fun, are happy and everyone feels comfortable.

What does "honest food" mean to you?
Honest food is when the product is given the respect it deserves. The "love for the product" must be at the forefront.

Which restaurant in the world would you most like to dine at?
Eating at Grant Achatz's restaurant Alinea is a big dream of mine. And if El Bulli reopens at some point, I'll be there 100%.

What feeling do you want to convey to your guests?
That I love and live what I do and that the guests are the most important thing for me at that moment.

What was the most memorable event during your time at Restaurant Ikarus?
When we were awarded our fifth toque in Gault&Millau. That was a very special moment.

What are your personal goals?
That we continue to develop, improve and grow together even more as a team.

What do cohesion and team spirit mean to you?
In my opinion, these are the most important factors. We are only strong together and it only works if everyone gives 100% and supports each other.

What would be your biggest dream?
Not only to have the best chefs in the world as guests at Restaurant Ikarus, but also to have eaten in their restaurants myself.

Would you like to say a few final words?
I really enjoy coming to Hangar-7 everyday. Each day is different, it never gets boring, there is always a lot to see and experience - these are the factors that make me personally very happy. And I am sure that I will be able to pass on my joy and enthusiasm to the guests and colleagues for a long time to come.
